Turkey Meatballs Recipe:
Ingredients:
– Ground Turkey 1 lb
– Shiitake Mushrooms Shredded 3 caps medium size
– Carrot Shredded 1 medium
– Eggs 1 whole + 1 egg white
– Cilantro 1/2 bunch
– Fresh Basil 5-6 leaves
– Salt 1/2 tsp
– Red Crushed Pepper 1 tsp or to taste (I like it spicy)
Sauce:
Arrabbiata Sauce (I bought mine at the Whole Foods Store) – two cups OR Blend 3-4 large heirloom tomatoes with some salt and pepper 🙂
How to:
Combine all the ingredients until a consistent mix.
Roll the mix into a small meatball (golf ball size)
Place it on a baking tray covered with olive oil (1/2 cup)
Cover with a tin foil
Garnish it with fresh basil leaves or/and fresh parmesan flakes 🙂
You can enjoy it with pasta, zucchini pasta, quinoa or quinoa salad, or make a meatball sandwich.
Bon Appetite!
